50 g Sardinian Bread – Music Paper

Ingredients

1 clove Garlic
200 g Broccoli
to taste Olive Oil
50 g Sardinian Bread – Music Paper
to taste Chili pepper
to taste Rosemary and to taste Salt

Preparation

Boil the broccoli for 7-8 minutes. Brown the crushed garlic in 2 tablespoons of oil, remove it, add the broccoli, a pinch of salt and chilli pepper and sauté for 2-3 minutes. Turn off and let cool.
Set aside 4 florets for decoration and blend the rest until you obtain a soft cream. Divide the bread into 8 pieces, sprinkle them with rosemary needles and season them with a drizzle of oil.
Heat the bread in the oven at 150? for 5 minutes, arrange 4 pieces on a plate, cover them with the broccoli mousse and finish with more bread, decorating with the florets kept aside.
